Mix Veg

Ingredients

  • 2 cups mixed vegetables (carrots, peas, beans, cauliflower, potatoes)
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander for garnishing

Instructions

  1. Heat oil in a pan and sauté the onions until golden brown.
  2. Add ginger-garlic paste and cook for a minute.
  3. Add chopped tomatoes and cook until they are soft.
  4. Add all the powdered spices (turmeric, red chili, coriander) and cook for a minute.
  5. Add the mixed vegetables and salt. Mix well.
  6. Cover and cook on a low flame until the vegetables are tender.
  7. Add garam masala and mix well.
  8. Garnish with fresh coriander and serve hot.
