Mix Veg Recipe

Ingredients
- 2 cups mixed vegetables (carrots, peas, beans, cauliflower, potatoes)
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- Fresh coriander for garnishing
Instructions
- Heat oil in a pan and sauté the onions until golden brown.
- Add ginger-garlic paste and cook for a minute.
- Add chopped tomatoes and cook until they are soft.
- Add all the powdered spices (turmeric, red chili, coriander) and cook for a minute.
- Add the mixed vegetables and salt. Mix well.
- Cover and cook on a low flame until the vegetables are tender.
- Add garam masala and mix well.
- Garnish with fresh coriander and serve hot.
