Bharva Karela

Ingredients

  • 4-5 medium-sized bitter gourds (karela)
  • 2 onions, finely chopped
  • 1 tomato, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1 tablespoon fennel powder
  • 1 tablespoon amchur powder (dry mango powder)
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander for garnishing

Instructions

  1. Wash and peel the bitter gourds. Slit them lengthwise and remove the seeds.
  2. Boil the bitter gourds in salted water for 5-7 minutes. Drain and keep aside.
  3. Heat oil in a pan and sauté the onions until golden brown.
  4. Add ginger-garlic paste and cook for a minute.
  5. Add chopped tomatoes and cook until they are soft.
  6. Add all the powdered spices (turmeric, red chili, coriander, fennel, amchur) and cook for a minute.
  7. Stuff the boiled bitter gourds with the prepared masala.
  8. Heat oil in a pan and place the stuffed bitter gourds.
  9. Cover and cook on a low flame until the bitter gourds are tender and cooked through.
  10. Garnish with fresh coriander and serve hot.
